Method:
- Cook the Balsamic vinegar & sugar in a saucepan. Simmer until the mixture thickens.
- Season both sides of the the Tanmiah chicken breast with salt, pepper & italian seasoning.
- Heat oil in a pan & cook both sides till golden brown.
- Remove & slice once slightly cooled.
- To prepare the salsa combine, diced tomatoes, onion, garlic, basil leaves, olive oil & salt.
- Lightly brush olive oil on the sliced bread & bake at 180C for 5 mins.
- Top the bread with chicken fillet, tomato salsa & pine nuts
- Drizzle the balsamic sauce & serve
