Spiced Chicken Tacos

Method:

For The Spiced Mayo:

• In a small bowl combine the mayonnaise, hot pepper paste, vinegar and sesame oil. Mix well and set aside.

For The Chicken:

• Prepare the sauce mixture by combining the brown sugar, soy sauce, oil & hot pepper paste.
• Next prepare the chicken by cutting into small tenders
• Heat oil in a flat pan.
• Cook the chicken tenders on both sides until golden brown, then remove them.
• Using the same pan, saute the garlic, ginger & spring onion lightly.
• Add the cooked chicken and the sauce mixture, and cook until fully coated and thickened.
• Heat the tortillas in a pan on medium heat.
• Serve with shredded lettuce, carrots, cucumber & the spiced chicken tenders topped with spicy mayo.
• Serve.
