Method:
- Wash the chicken well and pat dry.
- Placed water (enough to cover chicken) in a pot over medium heat, and add the chicken, mix seasoning,
carrots, celery, onion.
- Reduce heat once you reach a boil, and let simmer for about 45 minutes or until chicken is fully cooked.
- Let the chicken cool and remove skin, bones, and pull the meat.
- Heat oil over medium heat in a pot and add chopped onion until translucent then add peppers and garlic,
stirring for 5 minutes until softened.
- Add chicken to the pot, tomatoes until the mixture begins to boil.
- Reduce the heat, then add the beans and season the mixture with salt and pepper, cumin, and coriander
mix well and let simmer for about 20 minutes.
- Pre-Heat oven to 180°C.
- Place tortilla in plate, spread the chicken mixture, sprinkle with cheese, and wrap.
- Place prepared tortilla in a baking dish, cover with remaining sauce, and sprinkle remaining cheese.
- Placed in the oven for about 10 minutes or until cheese melt.
