Spatchcock Chicken

What You Need

Start with preparing the chicken by placing it breast side down.
Using sharp kitchen scissors, cut out the backbone of the chicken.
Turn the chicken over and press it down to flatten it.
For the seasoning, mix the piri-piri sauce, oil, lemon zest, and lemon juice. Then, apply it all over the chicken.
Preheat oven to 200°C.
Place the chicken in a foil-lined dish and roast it for 30 minutes.
Add the cherry tomatoes and cook for an additional 10 minutes.
Let is rest for 10 mins before serving.
