Method:
- Start with preparing the chicken by placing it breast side down.
- Using sharp kitchen scissors, cut out the backbone of the chicken.
- Turn the chicken over and press it down to flatten it.
- For the seasoning, mix the piri-piri sauce, oil, lemon zest, and lemon juice. Then, apply it all over the chicken.
- Preheat oven to 200°C.
- Place the chicken in a foil-lined dish and roast it for 30 minutes.
- Add the cherry tomatoes and cook for an additional 10 minutes.
- Let is rest for 10 mins before serving.
