Method:
Chicken
- Cut the chicken into large cubes and season with salt and pepper.
- Whisk egg whites in a bowl and add flour and water.
- Add the chicken cubes to the mixture and combine well to cover.
- Heat oil in a frying pan over medium heat, then add the chicken and fry until golden.
- Place the chicken on a paper towel to remove excess oil.
The Sauce
- Heat oil in a sautéing pan over high heat, then add onion, garlic, and ginger and stir for 3 minutes.
- Add the remaining vegetables, stirring for 3 minutes until just tender.
- Cut pineapples into medium-sized cubes and set aside.
- Mix corn starch with pineapple juice and add half the amount of soy sauce.
- Add the vinegar, remaining soy sauce and ketchup to the vegetable mixture, and stir-fry until it begins
to boil.
- Add the starch mixture to the vegetables while continuing to stir until the liquid begins to thicken.
- Add chicken and pineapple chunks to the vegetables.
- Serve with rice or noodles.
